Mexican Vanilla Extract is made from Vanilla planifolia, plant stock indigenous to Mexico, vanilla’s birthplace. It is a very smooth, creamy, spicy vanilla with bottom notes of caramel. It’s especially good in chocolate dishes, traditional Mexican cuisine, baked goods, alcoholic and non-alcoholic beverages such as horchata, Mexican punches, Rompope and bar drinks, ethnic foods, wild game, poultry or meat and even hot cereals!

Sticker Shock Hits Mexican Vanilla!
Unfortunately, Mexican vanilla prices have gone up significantly. In 2011 the Gulf Coast of Mexico was hit with the same heat and drought that plagued Texas. Vanilla plants were severely stressed and 90% of the beans fell off the vines. Mexico’s crop for 2011 was 10% of normal. In 2012 the weather was more moderate and there was plentiful rainfall. However, the plants were still in shock from the previous year and produced very few flowers. The harvest was again 10% of normal.
In 2011 the vanilla reserves were plentiful enough to make up for the loss; this year there is no backup. This is why the price has increased significantly. We hope for Mexican growers that this summer will be better, with a balance of rainfall and normal temperatures so that their plants recover and we can again have Mexican vanilla beans and extract at a more affordable price.
